About the Recipe
A staple grain that is a delicious stand alone with ghee and natural salt or you can use this as the structure behind a more dynamic meal. This simple recipe is prepared in such a way that it slows down the digestion of the starch so spikes in blood sugar should be minimal. Unlike other grains, basmati rice is great for all doshas and easy to digest when prepared in the following way.

Ingredients
1 cup organic white basmati rice
1 tsp natural salt
1 tsp ghee or coconut milk
Preparation
Step 1
Wash and rinse the rice 3 times and then set aside to soak in water for 30 minutes.
Step 2
Bring 6 cup of water to a boil, drain rice and add to boiling water carefully. Cook over medium heat for 10 - 15 minutes, stirring occasionally.
Step 3
Once the rice is done, immediately strain the water from the rice and put back into the pot. Add ghee and salt and stir to incorporate. Cover pot for 5 minutes to allow grains to firm up.
Step 4
Fluff witha fork and serve. Optional garnishing: cilantro, dill, mint etc.
